Executive Meet Mohamed Hegazy: Culinary Visionary and F&B Director
With a rich culinary journey that began in Egypt, Mohamed Hegazy has transformed his passion for food into a remarkable career spanning continents and cultures. Starting as a butcher in leading hotels back in 1998, Mohamed honed his skills before taking his talents to Dubai, where he played a pivotal role in the pre-opening teams of prestigious establishments like the Shangri-La Hotel and The Address Dubai Mall.
In 2010, he ventured to Macau to lead the culinary team at an authentic Asian 5-star resort, and by 2012, he had risen to the role of Executive Sous Chef. His journey continued in Hong Kong, where he made significant contributions as Executive Production Manager at Angliss Hong Kong Food Service Limited and later as Research and Development Manager for Cathay Pacific Catering Services.
Now, as the F&B Director managing ChessHouse restaurants, Mohamed combines his extensive experience and creativity to deliver exceptional dining experiences. Virender Kumar
Executive Chef Virender Kumar is a culinary maestro hailing from Delhi, India, with an impressive career spanning over two decades in the culinary industry. Throughout his illustrious career, Chef Kumar has honed his skills at various esteemed restaurants and hotels around the globe, showcasing his expertise and passion for Indian cuisine.
Notably, Chef Kumar served as the Group Executive Chef for Indian cuisine at the renowned Shangri-La Group, where he spearheaded the opening of dining outlets at prestigious properties such as Shangri-La Rasa Ria in Kota Kinabalu and Pudong Shangri-La in Shanghai. His culinary journey also took him to Shangri-La establishments in the Philippines, Abu Dhabi, and Dubai, where he left an indelible mark with his innovative culinary creations and world-class culinary techniques.
Before his relocation to Hong Kong in 2022, Chef Kumar held the esteemed position of Chef de Cuisine at Galaxy Entertainment in Macau. Prior to this, he showcased his talents at Mardan Palace in Türkiye, where he further refined his culinary skills and garnered appreciation for his exquisite dishes.
Chef Kumar is particularly renowned for his mastery of curry dishes, skillfully blending Indian spices with his unique fine touches. His meticulous attention to detail and dedication to excellence ensure that every dish is a harmonious celebration of flavors, earning him accolades and admiration from food enthusiasts and industry professionals alike. His culinary prowess not only highlights his technical skills but also reflects his passion for creating memorable dining experiences.

Faycal El Moujahid
Chef Faycal El Moujahid is a seasoned executive chef with a distinguished career that has taken him to some of the most renowned Michelin-starred restaurants and luxury hotels around the world. With experience working in establishments such as Les Jardins De La Medina Hotel in Morocco, the Address Hotel & Resort in Dubai, and The Galaxy Macao Hotel & Casino in Macau, Chef Faycal has honed his skills and developed a unique culinary style that sets him apart in the industry.
One of Chef Faycal's notable positions was as the Executive Sous Chef at AVA Restaurant Slash Bar at the Hotel Panorama by Rhombus in Hong Kong. During his time there, he showcased his talent for creating innovative and delectable dishes that delighted guests and garnered critical acclaim.
Chef Faycal's dedication to his craft, attention to detail, and commitment to excellence have earned him a reputation as a culinary master. His passion for creating unforgettable dining experiences continues to drive him to push the boundaries of culinary artistry, making him a highly sought-after chef in the hospitality industry

Samer Al Jarallah
Growing up in Palmyra city in Syria, I was always fascinated by the art of cooking that my father demonstrated in our home kitchen. Watching him prepare his special dishes ignited a passion within me to learn more about food and culinary arts. In 2005, I pursued my dream by obtaining a diploma in culinary arts, which paved the way for my career in the hospitality industry.
My journey began at Palmyra Hotels, where I gained valuable experience before venturing to Doha in 2008 and then to Dubai in 2011. In Dubai, I had the privilege of working in renowned 5-star hotels such as Mövenpick, JAL Hotel, Intercontinental Hotel, Radisson Hotel and Crowne Plaza Hotel. Each experience enriched my culinary knowledge and skills, preparing me for greater challenges ahead.
In 2023, I made the bold decision to relocate to Hong Kong to join the prestigious Chess House group.
Chef Samer masterfully blends Lebanese seafood with Mediterranean influences, showcasing his creativity by incorporating Middle Eastern ingredients. His unique combinations highlight vibrant flavors, perfectly catering to the discerning palates of Hong Kong customers who crave authentic culinary experiences.

John Nguyen
Chef John Nguyen, a pioneer of modern Vietnamese cuisine, has made his mark in the culinary world with his innovative and boundary-bending menus. Born in Saigon, Chef John initially gained recognition in New York when he opened Hanoi House in the East Village. His dynamic approach to Vietnamese cuisine subverted expectations and earned him the title of 'Chef of the Year' by Eater and 'Best New Restaurant' by New York Magazine in 2017.
With decades of experience under his belt, Chef John is now making waves in the vibrant dining scene of Hong Kong. At Xuan in Wanchai,he continues to highlight local flavors and seasonal specialties through thought-provoking menus. His dedication to showcasing the depth and complexity of Vietnamese cuisine has earned him accolades such as 'Best New Restaurant' by Tatler and 'Chef of the Year' by Hong Kong Living.
Currently, Chef John has joined us at Chess House, where he is in charge of running our Asian restaurants Mam Tom, BKK, and the soon-to-be-open Makan Makan. With his passion for pushing boundaries and exploring new culinary horizons, Chef John Nguyen is undoubtedly a trailblazer in the world of modern Asian cuisine.
